June 3, 2024 ~ Lucy Ann Lance talks with Karen Stipe, a retired physical education and health teacher from Belleville, has founded Wander Bowls, a food truck that offers healthy and delicious acai bowls. The food truck, which operates out of a pop-up camper, serves bowls made with natural ingredients such as acai berries, bananas, strawberries, and blueberries, with customizable toppings like granola, Nutella, and chia seeds. Stipe aims to provide nutritious options at various locations, including farmers markets, sporting events, and parties, catering to dietary preferences such as gluten-free, keto-friendly, vegan, and vegetarian.
